I’m not a breakfast eater. I have tried and failed many times at becoming a breakfast eater. I often cannot eat more than a few bites if I eat when I get up and if I can, I often become nauseated soon after. For the last 5 years, my morning breakfast has been coffee and my morning snack has been treated more like breakfast. Since becoming pregnant and fighting off the nausea, I have started to eat breakfast before leaving for work. It started out as dry toast but it has honestly grown into so much more. Dare I say that I’m actually starting to look forward to breakfast in the morning?!
Starting my day with something healthy but also quick has been a learning curve. It’s so easy to grab a pop tart or a granola bar and run out the door. It’s also easy and healthier to spend 5 minutes to make something fresh and healthy! Below are a few thing I’ve currently got in rotation.
Long live the smoothie! For the longest time, it seemed like I couldn’t make a smoothie at home that tasted good. They never tasted great and the consistency was never right. During the winter break, I made sure to perfect my smoothie game. First of all, I wasn’t mixing the smoothie long enough. My last blender was truly terrible! Luckily, a generous friend had an extra blender he was willing to part with! Next, I started looking for actually recipes until I got the hang of things and I learned that frozen bananas make a smoothie creamy and delicious. Now my smoothies are smooth, delicious and super quick!

Toast for All
Toast can be one of the easiest and quickest breakfasts there is. You can even make it exactly to your liking. While avocado toast has made it’s way into everyones hearts, there is so many more toasts in the toaster! I have personally found that I love to put nut butter, honey, cinnamon, and coconut flakes on toast. I also love to add fruit and a spoonful of greek yogurt on my toast. When I have a little extra time, I really enjoy making a fried egg in the middle of toast and top it with mashed avocado, a little feta, and crushed red peppers! YUM!
It took me a while to like overnight oats. They were always so mushy and had no flavor. After some major trial and error, I finally found a recipe that I love: Peanut Butter Overnight Oats. Sometimes I add in coconut flakes as well! If I’m really feeling lazy, some nights I will portion some greek yogurt into a small Tupperware and add toppings like granola, fruit, coconut flakes, or honey in the morning before I leave.

Whether you make egg muffins or a big frittata, this is the easiest way to get your eggs on a busy morning. I especially enjoy the versatility that egg mixtures provide. While they are delicious portioned out and eaten alone, some mornings I will heat up some tortillas with cheese and make breakfast tacos out of them.
